Wild Mushroom Gratin Recipe
This recipe is as simple and elegant as it is delicious and a wonderful way of serving wild mushrooms.
Preparation time: 12 minutes || Cooking time: 15 minutes
You'll need:
- Olive oil: 2 tablespoons
- Butter: 30gm
- Garlic: 1 clove
- Chestnut mushrooms: 250gm
- Portobello mushrooms: 250gm
- Muxed wild mushrooms: 250gm
- Parmesan cheese: 75gm
- Salt and pepper to taste
First, crush the garlic, halve the chestnut mushrooms, thinly slice the portobello mushrooms and the mixed wild mushrooms and grate the cheese.
Preheat the grill until hot.
Heat a frying pan over high heat, add the oil and half of the butter then sautee half the garlic with the chestnut and portobello mushrooms for two minutes, then transfer everything into an ovenproof dish.
Repeat the process with the remainder of the butter, garlic and wild mushrooms. Scatter the wild mushrooms on top of the mushrooms in the dish, season and sprinkle with parmesan then grill for 5 minutes or until the cheese melted and the mushrooms have lightly browned.
