Spinach Soup Recipe
A healthy and detoxifying spinach soup, packed with superfood yumminess from spinach and lentils. Added benefits worth mentioning are the anti-aging properties of spinach*.
Preparation time: 10 minutes || Cooking time: 40 minutes
You'll need:
- Olive oil: 2 tablespoons
- Onions: 2
- Garlic Cloves: 2
- Green lentils: 75gm
- Vegetable stock: 1L
- Frozen peas: 150gm
- Fresh spinach: 200gm
- Double cream: 50ml
- Salt and pepper to taste
First, chop the onions then peel and crush the garlic.
Heat the olive oil in a deep saucepan over medium heat and saute the onion and garlic for a few minutes, then stir in the lentils and stock. Bring to boil and cook for 30 minutes, until the lentils are fully cooked.
Add the peas and spinach to cook for another 3 minutes, then blend the entire soup until the composure is smooth. Season to taste and serve with cream.
