Spaghetti with Tomatoes, Pesto and Bread Crumbs Recipe
Enhance your usual tomato sauce spaghetti by adding vibrant pesto and bread croutons. Quick and flavorsome dish!
Preparation time: 8 minutes || Cooking time: 12 minutes
You'll need:
- Spaghetti (or any other shape of pasta): 250gm
- Olive oil: 3 tablespoons
- Onion: 1
- Garlic: 2 cloves
- Chopped tomatoes: 400gm from a can
- Fresh green pesto: 3 tablespoons
- Parmesan cheese: 25 gm
- Ciabatta: 50gm |( alternative to this is bread crumbs)
- Salt and pepper to taste
First, chop the onion, crush the garlic, grate the cheese and cut the bread into cubes.
Cook the spaghetti in a deep saucepan with slightly salted water, according to the instructions on the pack, then drain and set aside.
Heat 2 tablespoons of olive oil in a frying pan and saute the onion for 3 minutes or until soft, add the garlic and cook for another minute, then add the tomatoes and cook for 5 minutes. Add the pesto, pasta and parmesan, toss, season and put into serving bowls.
For the bread, heat the remaining oil in a frying pan and whizz the bread cubes in a food processor, then add to the pan and fry until fully crisp. Sprinkle the bread crumbs over pasta when serving.
