Salmon and Cod Gratin recipe
A wonderful combination of salmon and cod with carrot and potatoes in a cheesy sauce. This recipe is done in 30 minutes or under.
Preparation time: 15 minutes || Cooking time: 15 minutes
You'll need:
- Butter: 40gm
- Leeks: 150gm
- Flour: 40gm
- Milk: 600ml
- Dijon mustard: 1 tablespoon
- Lemon juice: 1 tablespoon
- Parmesan cheese: 30gm
- Cheddar cheese: 70gm
- Salmon fillet: 200gm
- Cod fillet: 200gm
- Carrot: 200gm
- Dill: 1 tablespoon
- Potato: 175gm
- Salt and pepper to taste
First, trim and slice your leeks, grate the parmesan & cheddar, cut the fish in cubes, chop your dill, dice the carrot, peel and dice the potato.
Heat a saucepan over medium fire, add the butter and cook the leek for 4 minutes, then add the flour and stir for a further minute. Slowly add the milk while stirring, bring back to boil and stir continuously until the mixture thickens.
Add the mustard, lemon juice, the cheeses and the fish and cook gently for another 4-5 minutes, then remove from heat and add the dill.
Boil the carrots and potato together in boiling water for 10 minutes or until cooked through, then add them to the main dish.
Optional:
As a last step you can heat the grill, sprinkle extra cheese over the mixture in an ovenproof casserole and cook for a further 5-10 minutes, until the top cheese layer becomes golden.
