Orzo and Prawn Confetti Salad recipe
A delicious and multicolored salad which incorporates orzo, pasta shaped like a grain of rice.
Preparation time: 8 minutes || Cooking time: 12 minutes
- Orzo: 200gm
- Mayonnaise: 6 tablespoons
- Ketchup: 3 tablespoons
- Worcestershire sauce: a few drops
- Lemon juice: 1 tablespoon
- Tomatoes: 2
- Spring onions: 1 bunch
- Sweetcorn: 1 can
- Prawns: 200gm - small, cooked
- Lettuce leaves: to serve
- Lemon wedges: to serve
- Salt and pepper to taste
First, deseed and dice the tomatoes, slice the spring onions and drain the sweetcorn can.
Cook the orzo in lightly salted water, according to its pack instructions, drain and cool under cold water. Place the mayonnaise, ketchup and Worcestershire sauce in a large bowl, add lemon juice and 4 tablespoons of cold water and whisk until smooth.
Then add the remaining ingredients, orzo included, season well and mix until it's all combined, then serve on the lettuce leaves.
