Mediterranean Baked Chicken Drumsticks recipe
A delicious baked chicken, infused with the taste of the Mediterranean, takes less than 15 minutes to prepare and less than 1 hour to cook.
Preparation time: 12 minutes || Cooking time: 45 minutes
- Chicken drumsticks: 8
- OR Chicken thighs: 4
- Olive oil: 2 tablespoons
- Garlic: 2 cloves
- Red onion: 1
- Red Pepper: 1
- Tomato passata: 500gm
- Sundried tomato paste: 2 tablespoons
- Salt and pepper to taste
- Basil leaves to garnish
First, crush the garlic, slice the onion and deseed and chop the red pepper.
Heat the oven to 200 degrees Celsius. Pierce each chicken piece with a knife multiple times and drizzle with olive oil. Rub the crushed garlic into the chicken and place it in an ovenproof dish to roast for approximately 20 minutes.
Add the onion and red pepper to the ovenproof dish and bake for another 15 minutes. Mix your passata with the sundried tomato paste and pour it over the chicken, then bake for another 10 minutes or until the sauce is making bubbles. It's done.
