Lamb Burgers with Salsa recipe


Rather spicy and juicy lamb burgers make for a great BBQ dish or take-away meal. Best served in a toasted pitta bread with a tomato, cucumber and mint salsa.

Preparation time: 25 minutes || Cooking time: 20 minutes

You'll need:

   - Olive oil: 1 tablespoon

   - Pitta bread: 4 large

   - Carrot: 1

For the burgers:

   - Minced lamb: 500gm

   - Parsley leaves: 4 tablespoons (chopped)

   - Onion: 1

   - Ground cumin: 1 teaspoon

   - Ground coriander: half a teaspoon

   - White breadcrumbs: 50gm

   - Egg yolk: 1

For salsa

   - Cucumber: 100gm

   - Cherry tomatoes: 100gm

   - Spring onions: 2

   - Rice wine vinegar: 1 tablespoon

   - Olive oil: 1 tablespoon

   - Mint leaves: 1 tablespoon (chopped)

Start by grating the carrot, chop your parsley leaves, chop the onion, peel and slice the cucumber, quarter the tomatoes, slice the spring onions.

Place all burger ingredients inside a food processor and blitz until mixed, then season and share into 8 burgers.

Heat the olive oil in a pan over moderate heat, add the lamb burgers and fry for 4 minutes on each side, until well browned and cooked through.

Toast the bread and slice the large pitta's in half to make 8 slices. Place a burger inside each pitta and add some grated carrot.

For the salsa, mix the vegetables together and add vinegar, oil, mint to serve. You can serve it on the side or pour it over the burger.
