Honey Glazed Chicken with Lemon and Thyme recipe

 

A classic roast made even more mouthwatering with the sweet and zesty lemon, honey and thyme. Very flexible, the side dish can be rice, potatoes, vegetables.

Preparation time: 10 minutes || Cooking time: 60 minutes

You'll need:

   - Large chicken: 1.6KG or more

   - Olive oil: 2 tablespoons

   - Lemon juice: from 1 lemon

   - Grated zest: from 1 lemon

   - Garlic Clove: 1 

   - Honey: 2 tablespoons

   - Thyme Leaves: 1 tablespoon

   - Salt and pepper to taste

Preheat your oven to 200 degrees Celsius, then season the chicken and place it in a roasting tin (baking tray - alternative). Drizzle with olive oil and roast for 45 minutes or until golden and almost fully cooked through. Check if it's cooked by attempting to pierce with a fork. 

Mix the lemon juice, zest, garlic, honey and thyme in a bowl. Remove the chicken from the oven and pour the mixture over it, then return the chicken to the oven for a further 15-20 minutes, until it is fully cooked and golden brown.
