Cod in Cheesy Sauce recipe
A classic combination between a creamy and cheesy sauce, and cod fish. This one is a "20 minutes and under" recipe.
Preparation time: 6 minutes || Cooking time: 14 minutes
You'll need:
- Butter: 25gm
- Onion: 1
- Flour: 2 tablespoons
- Rice wine vinegar: 2 tablespoons
- Milk: 300ml
- Parmesan cheese: 25gm
- Skinless Cod Loin: 250gm
- Chives: 2 tablespoons
- Salt and pepper to taste
First, chop the onion, grate the Parmesan cheese and cut the cod loin into small chunks (3-5cm).
Start by making the sauce. Place a saucepan over medium heat and melt the butter, then add the onion and cook for approximately 5 minutes or until soft. Add the flour and vinegar and cook for a further 1 minute, then add the milk slowly while stirring continuously.
Bring everything to boil and cook until it thickens, then add the Parmesan cheese and salt/pepper to taste.
When the Parmesan has melted, add the chunks of cod and simmer over medium heat for 3-5 minutes or until the cod is cooked. Lastly, add the chives, give it another stir and remove from heat. Serve immediately.
