Chicken Chow Mein
Classic Chinese recipe in a tangy sauce. Loaded with fresh vegetables and some chili, this one is ready in no time.
Preparation time: 8 minutes || Cooking time: 10 minutes
You'll need:
- Egg noodles: 125gm
- Sunflower oil: 2 tablespoons
- Chicken breast: 2 breasts
- Carrots: 2
- Mushrooms: 100gm
- Snap peas: 200gm
- Pak choi: 2
- Red Chili: half
To prepare the sauce you'll need:
- Salt & pepper to taste
- Dry sherry: 2 tablespoons
- Soy sauce: 2 tablespoons
- Oyster sauce: 2 tablespoons
- caster sugar: 1 tablespoon
- Sesame oil: 1 tablespoon
- Cornflour: 1 tablespoon
- Garlic cloves: 1
First, remove the skin from the breast (if applicable) and cut into thin strips, cut the carrots lengthways in thin pieces, dice the mushrooms, slice pak choi widthways and dice the chili.
Mix all the sauce ingredients into one bowl.
Cook the noodles until soft, then drain them under cold water and place aside.
Heat the oil over high heat in a deep frying pan, season the chicken and fry it until golden brown or cooked. When done, set aside.
Heat the oil over high heat again, add the vegetables and chili and stir fry for approximately 3 minutes. Add the noodles, chicken and the sauce from the bowl you'd prepared in advance and cook over high heat for a further minute.
Serve immediately.
