Cherry Tomatoes Frittata Recipe
Possibly a great combination of flavours for a frittata that makes it a great breakfast or lunch dish. Safe to say that if you put a slice in your child's lunchbox, it's not coming back to sender.
Preparation time: 12 minutes || Cooking time: 20 minutes
You'll need:
- Olive oil: 2 tablespoons
- Onions: 2
- Potatoes: 8
- Cheddar cheese: 30gm
- Eggs: 5
- Whole milk: 2 tablespoons
- Cherry tomatoes: 8
- Snipped chives: 1 tablespoon
- Salt and pepper to taste
First, peel and chop the onions, scrub and slice (in thick wedges) the potatoes, then boil them until fully cooked, grate the cheddar, beat the eggs in a bowl and halve the cherry tomatoes.
Heat the olive oil in a frying pan over low heat and saute the onion for 5 minutes or until soft then add the potatoes, season and stir.
In the beaten egg bowl add the cheese and milk, season and mix well, then pour into the frying pan and cook over medium heat until all set. Arrange the tomatoes on top and sprinkle with chives then place under the grill for 5 minutes until lightly golden and fully cooked. You can serve both hot or cold.
