Avocado, Tomato and Chicken Sandwich recipe
Arouse your senses with these avocado and chicken sandwiches, enhanced by a dash of lime. They don't take much time to prepare and taste really good.
Preparation time: 12 minutes
- Tortilla wraps: 2
- Chicken breast: 1
- Tomato: 1
- Avocado: 1
- Spring onion: 1
- Mayonnaise: 3 tablespoons
- Lime juice: from one lime
- Cheddar cheese: 50gm
- Salt and pepper to taste
First, you'll have to dice your chicken breast and cook it thoroughly, chop the tomato, remove the stone, peel & chop the avocado, slice the spring onion, squeeze the juice from a lime and grate the cheddar.
Warm the tortilla wraps according to the packet instructions. Meanwhile, mix the chicken, tomato, avocado, spring onion, mayo and lime juice in a bowl, season to taste and spread alongside one half of each wrap.
Sprinkle the grated cheese over, roll it up and serve as is or slice it into smaller servings.
Works really well with toast and most bread types.
